How did pastry chefs mix batter and dough before electric mixers were invented?

Before the invention of electric mixers we made batters and doughs by hand.

Before the invention of the modern stainless steel whisk, people used whisks made with twigs, like tiny brooms. 

But most of all, professional cooks and chefs used assistants to do the heavy lifting. If a batter needed to be beaten for an hour, as most early pound cake recipes call for, you can bet the head cook wasn’t the one standing over the bowl. Some kitchenmaid or sturdy footman would be drafted for the task.
